I NEVER CONSIDERED HOW MUCH DIFFICULITY HE WOULD HAVE NAVIGATING DOWN A STOVE PIPE. (MY LITTLE FINITE MIND DIDN’T CONSIDER THAT FACET). THIS IS A COMPARISON TO WHERE OUR “LITTLE FINITE MIND’S” ARE TODAY.

The olive tree for centuries and even milleniums has covered the Mediterranean region and has participated in the development of the culture of entire civilizations. It is connected with the oldest Mediterranean civilizations, held a significant place in the cultures and became the tree with the most important crop.

According to the Greek Mythology, the olive tree was a result of divine intervention and was protected by laws. Herodotus says that until goddess Athena gifted the olive tree to Athens, there was not another tree in the world that produced olives. Its mythic imagination has reached its highest extend.

It became the symbol of the city as soon as it sprung up on the sacred rock next to the Acropolis and became the main part of the Greek heritage. Today the olive tree thrives and prospers in every corner of the islands and the main land.

A Jewish legent says that the tree of life is the olive tree. From its dead roots, new roots arise, its leaves never fade and it always rejuvenates. In the Mount of Olives which was named for its olive orchards and was sacred and symbolic as the Garden of Gesthsemane, the place He was betrayed and abused, there are still trees that produce. They are immortal.

Olive oil and wine were poured on the wounds of the robbed traveler by the good Samaritan in Jericho. Olive oil and wine were used by the priests on the altar of the Temple. Olive oil was used for light and heat. Pouring olive oil on troubled waters was an offering of peace.

Despite bad weather conditions, the olive tree will give olives. When an olive tree is cut down or burned, new sprouts will appear. Nothing can destroy an olive tree.

The olive tree symbolizes faithness and steadfastness. “I am like an olive tree in the House of God, I trust Him forever.”

In the Psalms, Paul describes the relationship between God and the Jewish people, long and ongoing. The olive tree represents God’s promises to Israel, which are growing from the tree’s holy root, the Messiah. The branches are the Jewish people. The roots, the trunk and the branches, all support each other.

Since the prehistoric era, olive oil in Greece has been a very important beauty component. It was used for face and body treatments. It smoothen the skin, maintained its elasticity and added radiance to it, because of its moisterizing properties.

The Greeks and Romans used olive oil for cleaning their bodies. They applied olive oil and sand on, and removed the mixture and the dirt, with a scraper called “strigil”.

For thousands of years the Greeks made olive oil soap for exporting to other regions. Soap manufacturing is traced back to ancient Greece, in the island of Lesbos. During animal sacrificies in honor to their gods, the incinerated animals and the ashes from the wood were mixed. According to the texts, after a rainfall, a yellow residue was running down the hill, from the mixture of the ashes and ended in the river.

Women washing their clothes in the river, noticed that their clothes became cleaner, when the waters were yellowish. Poetess Sapho, in her writings refers to this action. The Greeks to honor her, called this action “Saphonification”, which is also the chemical term of the soap manufacturing.

Olive oil soap when mixed with water, gets rid of the dirt from the skin and clothes. Due to its purity, it hydrates and protects the skin. It is non-toxic and environmentally friendly.

In the 8th century, soap was made in Italy and Spain and later in the 13th century, France became a major olive oil soap producer. By the 17th century, Italy and Spain made soap with olive oil and barilla (the ashes of this plant were used to make lye).

In the 15th century in Europe, the best body care was soaps made with olive oil. The soaps made in the southern part of Europe with olive oil, were of Superior quality than the soaps made in northern France, England and northern Europe.

Today in Crete, the lower grades of olive oil are used for soap making, because of their chemical properties, are more suitable for soap manufacturing. Used or unused virgin olive oil, can be used for soap making, with great results.

Here is an olive oil soap recipe:

Use always gloves and never use aluminum or tin containers.

3 litres of used or unused virgin olive oil, 3 litres of water, 500 grams of sodium hydroxite and some lavender oil for a nice fragrance.

In a container over heat, mix the sodium hydroxite with the water to disolve, stiring always the same direction. Slowly add the olive oil and continue stiring until it coagulates. At this time the scent can be added. Let cool for 3-4 hours and empty it in a wooden or plastic container. Let it sit for a few days, until it becomes solid. Cut in pieces and use.

All olive oils are not the same. The extra virginity and high quality of the olive oil is not measured by its taste or color, but its acidity. The color indicates the maturity of the olives. It should be golden green to dark green. The appropriate storage conditions, keep oil well preserved for about 18 to 24 months.

When bitterness and pungency are present, indicates the presence of antioxidants, which are components of high quality olive oil.

Choosing Olive Oil

The phrase “packed or bottled in Italy” means nothing. Italy is the biggest importer of olive oil in the world. Most of the imported olive oil in Italy is blended, packed and exported. The origin of the olive oil confirms its quality. The soil and climate, the variety of the olive and cultivation, are also indicators of the quality of the olive oil.

Bottled olive oil with the manufacturers name and address on it, is a must. If the origin is unknown, we should avoid it, because of the possibility of adulteration. Expiration date is also very important and reveals its freshness.

According to the rules of the European Union, edible olive oils should have less the 1% acidity for extra virgin olive oil and less then 2% for virgin olive oil.

The European Union supports the entrance of quality Greek olive oils in the International markets, but does not allow the distribution of bulk olive oil, because it is easy to adulterate and mislable.

The Greeks should stop exporting bulk extra virgin olive oil, because in the hands of unscrupulous businessman, it looses its identity.

Only branded olive oil can hold on to its identity.

Different nations have different symbols for the olive tree. One common symbolism associated with the olive tree, is PEACE!

The goddess of peace Irene, the daughter of Zeus and Themis, always was holding an olive branch in her hand. The couriers of piece, in war periods, went where they were send, holding an olive branch.

The olive tree is the symbol of wisdom. It was a gift from goddess Athena, the wisest daughter of Zeus and Metis. Metis means “Wisdom” or “Thought”, so Athena should be called the daughter of Wisdom not goddess of Wisdom.

The olive tree was the symbol of victory and the ancient Greeks crowned the Olympic Game Winners with a wreath (the Kotinos), made by olive branches, cut from the same olive tree, grown at the western part of the Temple of Zeus, by a pure, young boy, using a gold sickle. It was the most prestigious prize to get. The Kotinos still is a distinction of morality for the Greeks. They also rewarded the winners of Panathenaea, a sporting event in honor to goddess Athena, with an amphorea, which was a bottle (lecithy) filled with olive oil.

It is the symbol of light. Olive oil was used to light the lamp, so it is considered the symbol of light.

The symbol of wealth and prosperity. Its products brought income. Olive oil production was very important in the economy. Olive tree and olive oil revolves around the agricultural economy in the Mediterranean countries. The Greeks were the first ones to prosper from olive oil.

The symbol of fertility. Newlyweds were offered bread and olive oil. In the traditional medicine, olive oil was considered an aphrodisiac and an antidote to sterility.

The symbol of balance. The Celts believe that the olive tree is the tree of balance and dedicated to it the 23rd of September, because that specific date has 12 hours day and 12 hours night.

The symbol of health. Olive oil is very valuable to health and that is known for thousands of years. Hippocrates the father of Medicine in 400 BC, prescribed olive oil for many ailments.

The olive tree is the symbol of power, based on the fact that it lives long, simple and resistant life. In Italy according to rumors, there is a tree about 2,500 years old. It is the reminder of forgotten times and legacies and a witness of events gone by. This olive tree along with the two olive trees in Thebes, Greece, which are over 2,500 years old also, have seen and survived natural disasters, diseases, wars, and they still give fruit. That’s another reason of being considered a symbol of patience and tranquility.

The symbol of hope. The dove returns to the ark, holding an olive branch in its beak, bringing hope with the announcement of the end of the flood and the end of Noah’s cruise. Jesus prayed in the Garden of Gethsemane, which was an olive orchard, according to the disciples.

The symbol of longevity. The ancient Greek philosopher, Democritus 460 – 370 BC, believed that olive oil and honey prolonged a man’s life to 100 years. Don’t forget that life expectancy at the time was 40 years. Also the Greek philosopher Theophrastus in 300 BC, the historian Plutarchus in 100 BC and the god of medicine Asclepius have praised olive oil and its amazing healing properties.

Herodotus 484-425 B.C., the Greek historian, in his writings says that Athens in the 5th century, was the center of olive oil cultivation. Aristotle, one of the greatest philosophers of the ancient Greece, said that the cultivation of the olive tree was a science.

In the Iliad and Odyssey are many references for olive oil, made by Homer, who calls it “liquid gold.” To the Greek people, olive oil has been a daily food which is necessary for health, religious ceremonies and the economy.

By the year 1500 B.C. Greece became the largest producer in the word and the Greeks emigrated in Italy, France, Spain, northern Africa and they established trade with these new cultures, with olive oil being the main currency.

The 7th century B.C. Attica was full of olive orchards. The olive tree was sacred and the Athenian statesman Solon, legislated a law, that protected the olive trees in Attica. Anyone who did harm to an olive tree, would be given the death penalty. At the time he forbid-ed olive oil exporting. During the Panatheneae, the most important athletic contest, the winners got 5 tons of olive oil stored in a huge vessel, amphorae, were not included in this law. The winners enjoyed the potential results of becoming wealthy.

Geografically Greece is difficult to cultivate because of its steep and rocky landscape. The much needed grain production was not enough to sustain the population and in exchange for grains, wine and olive oil were exported.

The Greeks discovered that planting the fields with olive trees, the financial return was greater than any other crop. Olives and olive oil were easier to transport in containers and without special care.

To the mid of the 6th century B.C. the Corinthians dominated the trade in the West. Stunning gold and silver jewelry, precious stones, marble and limestone, luxury textiles, honey, olives and Corinthian pottery full of olive oil, were exported in return of grains.

The laws of Solon increased the olive oil production and surplus for exporting and Greece became a super power in the Mediterranean region. Olive oil was the most important commodity until the Romans took over the world.

In the Greek mythology the olive tree is mentioned quite a lot and many of the gods and goddesses were born under it’s shade.

Doctors, artists, historians, gods and goddesses, prophets and priests have praised its qualities. The olive tree has been referred as sacred and immortal and history reveals its significant role that has played in the Greek culture.

A study in 2004 confirmed that people who followed the Mediterranean diet, live longer and disease free lives. The Mediterranean diet is a collection of eating patterns of people who live in the Mediterranean region.

Mediterranean is a word that reminds me where I came from. A place of breath taking valleys, coasts, hills and dreamy sunsets.

The countries that border the Mediterranean sea have different cultures and eating habits, but they have a few common characteristics. A high consumption of fruits and vegetables, legumes, cereals, yogurt and cheese, fair amounts of fish, wine with meals, lots of olive oil and an active lifestyle.

In a study which lasted four years and 22,000 participants living in Greece, followed the Mediterranean diet, which protected their hearts, showed incidence of 25% greater protection against heart disease, many kinds of cancer, also Alzheimer’s, neurological disorders and age related bone loss, due to its high content of mono-unsaturated fats and antioxidants such as vitamin E, poly-phenols and phyto-nutrients.

The Mediterranean diet is not low in fats. It is high in healthy fats from olive oil, nuts and omega-3s fatty acids from fish.

Mortality statistics show that people who followed the Mediterranean diet, live longer and mainly olive oil is responsible for such benefits. Olive oil along with fruits, vegetables, fish, plenty of sun and physical activity, are contributors to a long, healthy lifestyle.

It has been documented for thousands of years that mono-unsaturated fats and poly-phenols are the most important weapons in olive oil, which increase HDL cholesterol levels, decrease LDL levels and plasma triglycerides.

Heart health and anti-inflammatory benefits of the Mediterranean diet, come from seafood. Omega-3s from fish and olive oil poly-phynols, when consumed together, the benefits are great.

In 2009 Norwegian researhers used a mixture of omega-3 fatty acids and extra virgin olive oil, presented a data, relative to atherosclerosis prevention. The formation of lesions was reduced by 55%.

People with cardiovascular disease take a low dose of aspirin because of its anti-inflammatory and anti-clotting benefits, reduces the risk of heart attack. The poly-phenols in olive oil have the same effects.

Another study shows that the poly-phenols in olive oil reduce the sticking of platelets, just like aspirin preventing the risk of clotting. Poly-phenols in olive oil also reduce arthritis, a chronic inflammation.

Olive oil was the prefered food by the ancient Greeks and was described as the most perfect. Biochemists at the University of Milan, Italy, conducted a study and proved that over 1000 substances are contained in olive oil.

Olive oil was used as medicine from the ancient Greek doctors and Hippocrates used it to treat over 60 different conditions. When olive oil was used as medicine and wasn’t enough to cure the patient, it was used to anoint the body and laid to rest in the grave.

Olive oil prevents strokes and cleans the arteries by lowering the LDL (bad cholesterol) and raising the HDL (good cholesterol).

Extra virgin olive oil helps in vitamin A, D, E and K absorption, fights fermentation in the intestines and regulates bacteria.

Olive oil plays a major role in the cerebral growth in babies. It contains linoleic acid and the same amount of linolenic acid as breast milk. The linoleic acid is also important in the development of the nervous system and brain and also regulates the cholesterol levels in the blood. It can not be produced by the human body, it only can be presented in the diet.

Olive oil provides antiviral defense and minimizes cellular aging. Extra virgin olive oil has the ability to slow down the aging process with its bio-nutritional superiority. It is essential during the body growth, also during the golden years to minimize bone loss and fight osteoporosis.

With stable weather conditions, Greece is going to remain the third largest olive oil producer, after Spain and Italy, with 400,000 metric tons yearly. The last couple of years, the production was reduced to 300,000 metric tons, because of weather conditions. About 85% of the Greek olive oil is extra virgin.

Greece has the highest consumption of extra virgin olive oil worldwide. In the Greek diet, olive oil is the main used fat and it is considered the healthiest. Greece exports 90% of its olive oil to the European Union. Of that oil, 90% leaves Greece in bulk and 10% under Greek brand names. The majority of the Greek olive oil ends up in Italy.

Olive trees cover 60% of the Greek cultivated land. There are over 500,000 olive growers, which shows that olive producing is not industrialized. Even with modern technology, olive growing is still a family affair.

The whole country produces olive oil, but 70% of the whole production, comes from Peloponnese and Crete. There are many varieties of olive producing olives, but the main variety grown in Greece, is the Koroneiki, with place of origin Korone, Messenia, the Southwestern corner of Peloponnese and in the island of Crete.

The variety of Koroneiki is a very small olive that produces a high quality oil, with a golden green color, a fruity flavor and a smooth, pleasant and unique taste.

The olive tree takes about 7 years to give its first fruit and another 12 years to reach its full capability. Olive harvesting lasts from October to February.

Hand picking the olives and pressing them on the same day, is a trademark of excellent quality, superiority, low acidity and excellent organoleptic characteristics.

Olive oil is best when consumed raw, for appreciation of its flavor and aroma, also for its health benefits.

According to the Greek Mythology, the first king of Attica was King Cecrops, who from waist down had the body of a serpent. Legend says that when the king placed the foundation rock for the construction of his new city, god Poseidon came to him and asked to name the city, Poseidon. Then he struck the foundation rock with his trident and a war horse appeared on which to ride on and conquer other land. Another legend says that Poseidon struck the foundation rock and salty water sprang up, which indicated trade by sea.

The goddess of wisdom, Athena, came and asked the king to name the city, Athena. Then she struck the foundation rock with her spear and an olive tree appeared. This tree will become the symbol of peace and its fruit will be feeding the people forever.

After the competition, Zeus asked all the gods of Olympus to vote on the name of the city. All the gods voted for Poseidon and all the goddesses voted for Athena. Lastly Zeus voted and gave his vote to Athena. With the difference of one vote, she won and the city was named, Athena.

Another democratic version tells us that the people of the city had to vote on which name the new city will take. Poseidon offered the war horse and Athena offered the olive tree which gave them its priceless products forever.

The olive tree became the symbol of affluence, religious and social values, peace, wisdom and prosperity. The Greeks were the first people to cultivate the olive tree for its priceless products, which have been the foundation of the Greek economy.

Under the shadows of legends and traditions, Greece depends on the olive tree. Today there are 120,000,000 olive trees in Greece, about 12 trees per person as there were 12 gods. Almost 500,000 Greek families depend on the olive oil production, as their primary source of income.

In the island of Crete, the cultivation of the olive tree, traces back to the prehistoric era. In Peloponnese, fossils of the olive tree remnants and its products have been recovered, dated back to the paleolithic era, 20,000 years ago and in Santorini olive tree fossils were recovered, dated back 50,000 years ago.

In the Minoan times, olive oil was the main commodity used for trade. To this day different types of olive varieties in the Mediterranean region, are traced to ancient Greece.

The best olive oil comes from Greece. It is the gift from a goddess!
