Many studies have proven that the health benefits of the Mediterranean diet are countless. Lately a new study has confirmed that this type of eating, with olive oil as the major ingredient, should be adopted by everyone.

Dr. Anthony Pothoulakis who is a cardiologist in Hania Crete, said that the metabolic syndrome is a combination of high blood pressure, high cholesterol, high blood sugar and abdominal obesity.

Obesity is an epidemic in our times and connected to the metabolic syndrome. A fat belly, poisons our metabolism, with results in heart attacks, strokes and type 2 diabetes.

Olive oil contains antioxidant and anti-inflammatory ingredients. The Mediterranean diet and olive oil should be accompanied by exercise and a smoke free lifestyle.

Dr. Pothoulakis also said, that following the Mediterranean diet, leads in the reduction of metabolic syndrome.

This study which was conducted among 535,000 individuals, concludes that the Mediterranean diet, very rich in consumption of mono-unsaturated fats, mainly extra virgin olive oil, followed by fruits vegetables, legumes, fish, poultry and low fat dairy products, minimizes the risk of metabolic syndrome.

Olive oil should be the main source of fat in everybody’s diet and should replace saturated fats, because of its many health benefits, such as the reduction of heart attacks, improvements of blood sugar levels, etc.

Greek researchers reveal that when olive oil is consumed together with vegetables, show that olive oil has the main beneficial effects on arterial blood pressure.

Another study at the Second University of Naples, Italy, indicates that the Mediterranean diet has beneficial effects on people with the metabolic syndrome. It is lowering blood pressure, cholesterol, triglycerides and body weight.

The most reliable food source for thousands of years in the Mediterranean region is the olive tree (olea europaea). The olive tree, a present from goddess Athena to the Greeks, spread all over the region with the temperate climate, due to its easy propagation by the branch or the seed in the olive fruit.

Around the Mediterranean, different countries have different unique cultivations.

Table olives are a Greek product, very important in the Mediterranean diet. Their phenolic compounds, contain very important biological properties and provide us with great health benefits.

The phenolic fraction of table olives varies in quality and quantity of phenolic compounds, depending on the cultivation and processing methods.

The table olives contain high amounts of hydroxytyrosol, tyrosol and oleanolic acid. The phenolic compounds in olives are oleuropein, ligstroside and verbascoside which are loosing their contents during the maturity of the olive fruit and give elevation to hydroxytyrosol.

The processes decrease the phenolic content.

The poly-phenols are the most important antioxidants in our diet and are natural. They protect the body against oxidative stress and indeed are protective agents against diseases. The intake of extra virgin olive oil, very rich in poly-phenols, is very beneficial to health, because their antioxidant activity lowers risk of heart diseases.

There have been studies in Harokopio University, Athens, Greece, about the total antioxidant capacity AC (antioxidant capacity) of the olives and the drupe extracts of the black olives are higher in the antioxidant activity than the green olives, which are lower.

There are about five types of Greek olives available in the market. From each type of olives a small quantity was picked, and the flesh was separated from the pit with a small sharp knife. The flesh and the pit were weighed separately, to estimate the flesh to pit ratio and was freeze dried overnight. The fat in the dry flesh and pit was determined and the flesh percentage was 76%-82% and the pit percentage was 14%-24%. The percentages were different in every variety. On the other hand the poly-phenol content was the same for the flesh and for the pit, with the exception of the variety of the Cretan Thrubes, which contained the highest poly-phenols in the flesh and the lower in the pit.

Regardless of the type of olives, the results are the same. Table olives are a very good source of poly-phenols. The concentrations of poly-phenols in table olives vary according to the type of olive. Consuming about 10 olives daily, provides about 40 mg of poly-phenols from the flesh.

Hydroxytyrosol and tyrosol are the main poly-phenols and with a considerable increase of olive consumption, other poly-phenols found in the blood and urine, as phloretic acid, vanillic acid, ferulic acid, caffeic acid etc.

Documented health benefits of table olives have been reported, but very little is known and more studies are in the process.

Due to the high antioxidant compounds and the high amounts of monounsaturated fatty acids in extra virgin olive oil, the key ingredient in the Mediterranean diet, the health benefits are substantial.

Olive oil contains poly-phenols, carotenoids, tocophenols, chlorophyl and squalene, which have antioxidant properties.

When antioxidants clash with free radicals which are oxidized, they grant electrons and they become non toxic free radicals that are unable to propagate the reaction.

Extra virgin olive oil is necessary in the diet to strengthen the endogenous antioxidants, so they can fight the produced free radicals. The antioxidant content of foods is very important for the protection against oxidation and deterioration, and against continuing loss of nutritional value.

Researchers Christina Samaniego, Jose Javier Quesada, Maria Carmen Lopez-Martinez, Maria Rosa Sanchez and Herminia Lopez-Garcia de la Serrana at the University of Granada, Spain, reported, studies they did in human volunteers, have shown increased antioxidant activity in plasma and serum after the intake of antioxidant rich foods and especially olive oil.

The researchers after studying for four weeks the effects of two tablespoons of extra virgin olive oil intake daily, in volunteers 20 to 30 years old, all non smokers and in good health, non consuming vitamins, minerals or drugs, also the day before the study they didn’t consume any antioxidants (fruits, chocolate, wine, etc) to avoid interference with plasma AC (antioxidant capacity) measurements, and with HDL and LDL normal, they reported some great results.

During the study the volunteers replaced all fats with olive oil. Blood was drawn before the olive oil intake program, two weeks later and at the end of the program. The same type of olive oil was used to maintain the same fatty acids and antioxidant compounds.

The results showed an increase in HDL (good cholesterol) and a reduction in LDL (bad cholesterol).

Extra virgin olive oil intake, plays a major role in health and has positive effects against cholesterol related diseases.

Although fatty acids are very important, antioxidants are even greater.

The conclusion again from these findings is that using extra virgin olive oil daily in our diet, offers protection against many diseases.

Du Breuil also confirms that rubbing and spraying will destroy the insects and their black trails.

Olive growers are aware of the danger of these insects and are acting accordingly. Ignorance and neglect can bring a small olive oil production and tiny and underdeveloped fruit. Also can kill production and tree completely.

There are other insects that are not so important, that attack the olive tree. When the olive grower keeps his eyes open and takes action to face the enemy when it makes its appearance, there is nothing to be feared.

Many times Mother Nature comes to the rescue of human errors and carelessness. If an insect scientifically known as Hylesinus oleae, causes the branches to break when heavy winds occur and if a fly called dacus oleae, deposits its eggs on the fruit of the olive and afterwards feeds on the olive, the aunt and other carnivorous insects come and feed on them.

Pruning is the best preventive, so light and air can get in all parts of the tree and spray the whole tree with lime water. A very small portion will survive and that is going to be destroyed with the help of a greater force, the Mother Nature.

The olive fruit fly and the Mediterranean fly are the two other dangerous insects that attack the olive fruit and can cause serious damage. Both are considered very damaging pests for the olives, in Southern Europe, Middle East and North Africa. Most of the damage appears in the fall, between September and October.

The olive flies lay their eggs under the skin of the olive fruit and the caterpillar that comes from the eggs, feeds from the olive fruit flesh, leaving behind a track of brown tunnels. The effected olives appear to have brown spots, but when they are cut open, you can see brown tunnels and also maggots. The olive oil that comes from these effected olives, is high in acidity and the flavors are unpleasant and extra virgin olive oil is out of the question.

A certain type of caterpillar, called lepidopterous caterpillar, feeds on the leaves and flowers. Another serious enemy of the olive tree is the rabbit. It eats the bark of the olive tree and the result is that the tree is most likely to die.

Du Breuil tells us that another dangerous enemy of the olive tree is the excessive cold of some winters in Europe, when the thermometer reaches -12 degrees C. From the mid 1700 until the end of 1800 the olive trees have been frozen on an average of ten years.

California is a place where the thermometer doesn’t fall below -2 degrees C or 28 Fahrenheit, where the olive tree will stand without danger. This is a good reason why the cultivation of the olive tree should be adopted fearlessly and extensively. The climate in California is ideal for olives and olive oil production. Californian olive oils are of great quality and equal to European ones.

The quantity of oil in the olive fruit, keeps increasing until the very last moment it is harvested from the tree. So instead of picking the olives in November or December when they are ripe, we will get more oil, if we wait until February or March. The earlier the picking, the better the quality of the olive oil. If quality is aimed, the olives should be picked early.

Until the early 1900′s, after the olives were picked, they were transferred to the mill, where generally were placed on flat surfaces and turned over with a wooden shovel, once daily for about a week, to prevent molding. Then without any more delays were transferred to the mill to be crushed, or were placed in sacks where they were going to be kept for little longer and then would been shipped to an oil manufacturer, if the olive grower didn’t have the required press and crushing stone to making the oil himself.

The first pressing was made slowly and gently and gave the extra virgin olive oil. Then for the second pressing hot water was added and the pressing was made harder and gave the virgin olive oil.

The olive oil was placed in tin tanks and by sitting naturally for about a month, deposited its impurities on the bottom of the tanks. Then it was placed in cans or bottles for the market.

Another way for getting rid of the oil’s impurities, it was by filtering in tin barrels, with cotton batting at the bottom. This way it could been bottled and sold immediately after.

Finally in the remains of the second press, fermented olives were added (the ones that were fermented along the way), with plenty of hot water and pressed once more very hard. This time the pressing was done in a different press, so the bad quality and flavor of the oil, wouldn’t effect the better qualities. It was considered highly essential for the extraction of better grades of oil, to maintain perfect cleanliness.

When the pressing was over, the remains were dried and used for feeding the animals or used for fuel and etc.

Sieuve says that one hundred pounds of olives give thirty two pounds of oil.

Decandolle says the quantity of olive oil produced by the olive is fifty per cent of its weight.

Other writers say that the average proportion is twenty- five per cent.

This proportion varies, according to the variety of the olive. There are some varieties that give fifteen and even ten per cent. Another fact is the time of harvesting the olive. For quality pick early, for quantity pick late.

There are a few ways for the reproduction of the olive tree. The tree that gives us the liquid gold, the olive oil.

One way is by the seed. We understand that a grown olive tree has to be grafted, because if it doesn’t, it is going to remain a wild tree, producing a poor and small fruit. We also should understand that by using the seed, the tree is stronger, lasts longer, resists cold temperatures and can grow in most any kind of soil, than the ones grown from cuttings.

For all these reasons, this is the way generally used in the olive regions of Europe. When the olive tree is so robust by nature and not fussy regarding the choice of soil, enjoys remarkable longevity and isn’t afraid of excessive cold temperatures.

Should the olive tree grow from the seed method, that takes about 12 years to produce or by the cutting method that takes 4 to 5 years to produce the fruit?

Grafting becomes indispensable when the tree is raised from the seed. So is cutting.

I am in favor of the seed. The plant has to remain around 7 years in the nursery. After being grafted, it still requires 3 more years, before it bears fruit. None of the methods effects the olive oil.

The reproduction of the olive tree by seed, requires time and occasionally after being seven years in the nursery, can suffer a shock from being transplanted. The roots must be dampened til the tree is safe in the ground. This is a very important task to be observed in transplanting. The trees need special care to provide us with a good quality of oil, extra virgin olive oil.

The small trees, they will develop an astonishing vigor when planted in their permanent places. Their roots will grow deep and fast, they will stand without suffering hot or cold temperatures and may be one in three hundred won’t grow.

The older trees are more delicate, because of their development in the root system.

From the late 1800s, expert Mr. W. G. Klee in a bulletin from the University of California, says that there will never be developed a root system so fine as by starting the trees from small cuttings.

He recommends to take the tops from young growing trees, when both are not too soft or too hard, having three or four sets of leaves, put them in a small frame with sand and water them a few times during the course of a month . He states that in about four months, the little cuttings will develop roots and will be ready to set out.

In the same era Mr. Frank Kimbal, of National City, San Diego County, confirms the recommendations of Mr. W. G. Klee. This is another method of producing vigorous trees, which , within four or five years, will be from 10 to twelve feet high and will start to produce olives and olive oil.

The olive is an evergreen tree and has two vegetation periods a year. One in the Spring and one in the Fall. In climates where the winters are mild, vegetation rarely stops. If the cuttings are not taken from the tree during vegetation and placed in the nursery in about a week, there is danger of more than fifty percent of them dying.

An attempt to reproduce the olive tree from cuttings which were not recently cut from the tree, and that operation was performed during a season when the sap was too active, bring poor results.

Cuttings can be made from the suckers which grow from the base of the tree. If they are taken below the grafting point of a tree, raised from a seed, the tree will have to be grafted.

The olive tree can also be reproduced from the woody growths that form on its trunk, when it is old.

This kind of reproduction carries the mutilation of the trunk of the old olive tree. Cuttings can be provided from the ordinary process of pruning of the olive trees.

A dry soil has to be provided when the trees are in the nursery to establish sturdier roots. A weaker olive tree raised in dry land, will always develop with more vigor than a stronger tree coming from irrigated soil.

The young plants in the nursery should be protected from drought, only by hoeing, during the summer. When taking the plants from the nurseries, they will adjust themselves to the hot soils where they will be planted, than if they had irrigation during their growing period.

This practice is recommended for the south Europe, where spring showers and summer storms are frequent and bring to these young plants, the necessary elements for life, leading to the production of an excellent olive oil.

The olive tree doesn’t need much water, so we have to be careful with the watering given to the young plants raised in nurseries and hoeing should be performed, because it is necessary for their growth.

The best season for transplanting to permanent sites, those small one year old cuttings, depends on the selected location. If the location is dry and light, it should be done in the fall and if it is heavy and damp, it should be done in the spring.

In dry soils it is best to transplant the young rooted cuttings in the fall, while in the wet lands it is preferable to do this in the spring.

For soils that retain water and the humidity is permanent, the roots rot and the plant dies. In dry and light soil, when the planting is done in the fall, the water received during the winter, it is absorbed down to the lower layers of the soil.

Olive trees growing from cuttings, will produce olives and olive oil four years later. Trees bearing no olives, at an advanced age, must have been produced from cuttings taken from trees raised from the seed and were never grafted. The fact of the early olive fruit bearing, is a result of the propagation by cuttings and the exceptional climate and virgin soils.

When the olive tree raised from the seed, remains in the nursery for many years to develop sufficient strength to receive a successful grafting and when transplanting it, the tap-root and part of the top has to be taken off, the roots will suffer from the exposure to the air and will end up in a long and severe injury of its whole system, with results of delaying considerably the production of olives and olive oil.
